Guacamole is something that most people know how to make – simply pureeing avodcado with lemon juice and spices. However, by taking a few extra steps, you’re guaranteed a hearty and delicious dip or side dish. It all starts by dicing one tomato and one small onion into similar-sized pieces. You can use finely or roughly chopped vegetables depending on how chunky and rustic you want the guacamole to be.

Once the coriander and vegetables are cut, they can be left to the side for the time being. Two large or three small avocados are then prepared and placed in a bowl. Of course, it is vital that they are ripe; unripe ones will be impossible to mash and have an unpleasant flavour.
The avocados are broken down roughly with a fork or a knife. Once again, the consistency you want can be achieved by how little or how much you decide to mash them. Personally, we like a chunkier texture. At this stage, the lemon juice is added. This not only creates a zesty, zippy flavour, but prevents the avocado from browning. The Tabasco and seasoning is also added, which can be done to taste.
Finally, the diced tomato, onion and coriander is folded into the mashed avocado mixture. Taste to see if more salt, pepper or Tabasco is needed. We like our guacamole with a bite, so will usually add 1 – 2 teaspoons of the really hot stuff!
SERVE & ENJOY
